Paniyaram

Paniyaram is a sweet dish made with rawa. This sweet is made in our house on festivals like Tamil New year and Deepavali. U can try this snack anytime … I would like to share with u the recipe of paniyaram , which I made this weekend.



Ingredients

Rava or sooji- 1 cup
Maida-3/4 cup
Sugar-1cup
Elachi powder-1/4 tsp
Oil for deep frying

Method

Mix rawa with water(thick paste so that no water stands on top) for half an hour. Be careful to add very little water so that batter doesn't become too watery.Add sugar , maida and elachi powder to the rawa paste. Mix it well and add little water if necessary. The batter should be thick like vada batter.
Heat oil in kadai and pour the batter with a ladle( smaller than the one u use for dosa) one at a time. When it becomes light brown turn over.

Hi Prema, we call this as "Uniappam". Instead of maida and sugar we use rice flour and jaggery, and it can be stored for few days also.We also add ripe banana:) Your recipe looks different. Will give a try:)

i tried out your recipe but mine turned out really hard and flat. any idea why? how much water should the rava be soaked in?

Hi Anonymous,
I think u added too much water. Just add very little water to rawa so that it can just be soaked (A thick paste.)soak for half hour and add the sugar and maida. After adding sugar it will become more loose and so add very little water if needed. The final batter should be like vada batter. do not make it thin like dosa batter.Try it out next time and u will definitely get it well. I will soon post the exact amt of water to be added to the rava.

hi i tried this but the panityaram wen i put it in hot oil , it broke into pieces and all a mess.. pl help..

hi purnima,
looks like u have added more water. add some water to the rava and if water stands on top drain it.leave it for half an hour and add sugar to it.
I hope u get it well when u try it out next time.
