Pineapple Upside Down Cake

I don’t do that much of baking ,though I wish to. This cake is done using readymade cake mix. It is a very easy and quick to make
Cake. It tastes delicious too….


Betty crocker super moist cake mix(french vanilla)- 1 pkt
Pineapple slices- 1 tin
Cherries(fresh or tinned)- a few
I have used fresh ones . but the tinned ones are better
Eggs- 3
Oil- ¼ cup
Water- 1 ¼ cup
Butter- 1 tsp


Prepare the cake batter as per the directions in the cake mix packet using eggs, oil and water.
In a cake pan smear butter and then arrange the pineapple rounds and cherries.
Pour the cake batter until ½ of the pan. Leave space for the cake to rise.
Bake the cake in a 350 degrees preheated oven for 30 to 40 minutes.
When cool place a plate on the cake pan and turn it upside down.

I was looking at all the wonderful dishes on your site - and I look forward to trying some... however, I must say, you took all the fun out of pineapple upside down cake.

I'm going to tell you how I make mine...

First - you MUST use a center tube pan. Grease the inner sides and tube of the pan (but not the bottom of the pan!) and carefully flour the pan. Be sure to not get flour and grease on the bottom of the pan (I know it's tricky - but it's worth it). Next - melt a stick of butter and pour it in the bottom of the pan. With your hand - scoop out a lump of dark brown sugar from the package - crumble over the butter. make sure dark brown sugar covers bottom of the pan evenly and entirely. Don't skimp on the brown sugar!

next - add pineapples and marischino cherries. (No fresh cherries or fresh pineapples - this cake is meant to be ... trashy)

Next - prepare your batter as you would - I sometimes use a box cake - but Fannie Farmer's yellow master cake recipe is the best out there.

Pour the cake batter over the pineapples - do not pre-bake the pineapple/cherry/brown sugar mix. no need to. A little butter from the bottom might mix in with the cake mix when you pour it in - that's expected. Put in the oven for 45 minutes or so on 350. Take out of the oven when a tooth pick can be inserted and comes out clean.
